Sri Lankan style Chickpea Curry

Chickpeas simmered in a coconut milk gravy, mixed with aromatic spices. This is a vegan friendly Island dish.

Ingredients
  

1 tbsp Vegetable oil

1⁄2 tsp Mustard seeds

1⁄2 tsp Fennel seed

1⁄4 tsp Fennugreek seed

1⁄2 oz White onion chopped

2 Pandan leaves whole

6 Whole curry leaves

1⁄2 tsp Ginger-garlic paste

1⁄2 tsp Meat curry powder

1⁄4 Medium tomato sliced (3 slices)

1 can 14 oz Chickpea

1 tbsp Coconut milk (can or powder)

Instructions
 

• Add spices to pan and tomato with oil on medium heat and saute 2 mins

• Add chickpea with liquid from can

• Cook for 2 mins

• Add coconut milk and mix

• Cook 1 min
