Okra Curry
This okra curry is a simple yet delicious Island dish where okra is simmered in medium spicy, slightly tangy onion-tomato-coconut gravy.
Course Side Dish
Ingredients
12 oz Frozen whole okra (southern style, Kroger)
1 tbsp Vegetable oil
1⁄2 tsp Mustard seeds
1 oz Chopped white onion
1⁄2 Medium sized tomato sliced
1⁄2 tsp Meat curry powder
1⁄2 tsp Paprika
1/8 tsp Cinnamon powder
2 Pandan leaves whole
1 tsp Ginger-garlic paste
1⁄2 tsp Salt
1⁄2 cup Water
5 Whole curry leaves
2 tbsp Coconut milk (powder or can)
Instructions
• Defrost and wash okra
• Cut into 1.5 inch pieces
• Add oil, onion, pandan and curry leaves to pan on med heat and saute
• Add spices, GG paste and saute
• Add tomato and saute
• Add okra to pan and saute for 5 mins
• Add water and let cook for 3 mins
• Add coconut milk
