Devilled Shrimp

A Sri Lankan devilled curry is a dry curry where the meat is cooked with a little caramelization, then stir-fried with banana peppers, tomatoes, onions and some spices

Ingredients
  

6 Large shrimp w/ tail peeled, marinated w/ pinch of salt

1 tbsp Vegetable oil

1⁄4 Large white onion sliced 2 inch slices

1 Large red chili pepper sliced into 1 inch slices

1 Large capsicum sliced into 1 inch slices

1⁄2 Large green chili pepper sliced into 1 inch slices (optional)

1⁄2 Med tomato sliced

1 tsp Ginger-garlic paste

1 tsp Chili paste (Chinese)

2 tbsp Sweet and sour sauce

1 tbsp Ketchup

Instructions
 

• Defrost shrimp w/ pinch of salt and leave aside

• Add oil to wok on high heat

• Add shrimp to wok and sauté until color of shrimp is light brown (1-2 mins)

• Move shrimp to side of wok and add 1 tsp oil

• Add GG paste, chili paste and sauté

• Add sauces and sauté

• Add veges EXCEPT tomato and sauté for 1 mins

• Add tomato and sauté for 1 mins

• Add curry leaves as garnish (optional)
