Spicy Tuna Turnovers

This cousin of a Latin American Empanada is known as ‘Patties’ in Sri Lanka. These delicacies are a spicy savory filling, enclosed in a flaky buttery pastry. This pastry is usually enjoyed as a tea-time snack, or even as a light breakfast. This version is baked.

Ingredients
  

1/2 Green chili chopped

1⁄4 Large white onion chopped

1 can tuna (4 oz can “chicken of the sea” tuna in oil)

1 Medium potato mashed (boiled and peeled)

5 Whole curry leaves chopped

1 pandan leaf whole (will be removed)

1⁄2 tsp Black pepper

1⁄2 tsp Salt

1⁄4 tsp Raw curry powder

1⁄2 tsp GG paste

1 tsp Vegetable oil

1 Small egg

5 empanda dough pieces

Instructions
 

  • • Add oil to pan on med heat
    • Mix tuna, vegetables and spices together in pan (EXCEPT POTATO)
    • Add potato and mix
    • Remove pandan leaf
    • Set aside this mix
    • Separately:
    o Prepare Goya Empanada dough pieces – defrost for 5 mins
    • Add 1 tbsp of tuna mix to empanada
    • Add egg wash to edges to dough
    • Close empanada
    • Brush with egg wash
    • Preheat 350F oven
    • Bake for 20 mins
