Chicken Biryani

Biryani made with boneless chicken that has been marinated with a special spice mix. This is not your average Biriyani.

Ingredients
  

1lbs Boneless, skinless, thigh meat chicken in 2 inch cubes

1⁄2 pkt Biryani mix

2 tbsp Vegetable oil

2 oz White onion chopped

1 tbsp Ginger-garlic paste

1 tbsp Yogurt – whole milk yogurt

1⁄2 cup Water

Rice:

2 cup Water

1⁄2 tbsp Vegetable ghee

1 tsp Chicken bullion

1 cup Basmati white rice

Instructions
 

• Wash and cut chicken into 2 inch cubes

• Mix with 1⁄2 packet of Bombay Biryani Masala mix (1 packet = 50g, so 25g of mix) and leave

aside

• Add oil to pan, add onion and saute till onions brown on med heat

• Add chicken to pan with ginger-garlic paste, yogurt and mix

• Add water and cook till temp of chicken at 165F

• In separate pan:

o Add water to low heat

o Add ghee and bullion to water

o Bring water to boil

o Add rice to water

o Cover pan

o Let cook till water gone

o Once water gone, cook for another 5 mins on low heat

• Layer bottom of serving dish with 1 layer of rice

• Then layer chicken mix on top – 1 layer

• Then add another rice layer on top

• Garnish with whole curry leaves and caramelized onions (optional)
